Nonna’s Classic Italian Amatriciana Recipe

I’m a sucker for anything Italian – pasta, of course, included. Cheese + tomato + fresh herbs = A dish that may as well have been made in heaven. Who could beat a formula like that? This classic Italian Amatriciana recipe will make your kitchen feel like your own little Italy. Enjoy.

Classic Italian Amatriciana

You will need

  • 1 pound linguini pasta
  • 4 slices bacon, diced
  • 1 teaspoon garlic, minced
  • 2 14.5 ounce cans stewed tomatoes
  • 1/2 cup onion, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons parmesan cheese, grated
  • 1/4 teaspoon crushed red pepper flakes

To make

In a large skillet over medium-high heat, cook the diced bacon for about 5 minutes, or until it is crisp. Add in the chopped onion and cook for another 3 minutes. Now add the red pepper flakes and garlic to the mix and cook for about half a minute. Pour in the canned tomatoes (don’t drain them prior), and let it simmer for approximately 10 minutes.

In the meantime, boil the linguini in a large pot with 4 quarts of water. Cook until al dente and then drain through a strainer over the kitchen sink.

Stir the basil into the sauce mixture (you can also keep some basil separate to garnish). Toss the sauce mixture with the cooked pasta. Serve with grated parmesan cheese.
